I've just had the most amazing fresh, crisp, invigorating salad that I had to share it with you - well the recipe at least! Most of my 'recipes' come from looking in the fridge to see what I have and creating something spontaneously. This is an extension of my shopping - I love looking to see what I find that is fresh, organic and enticing. I very rarely stick to a recipe or a shopping list!
So today I pulled out 2 green apples, 2 cucumbers a piece of lime (1/4) and a tablespoon of sauerkraut and washed and chopped and then threw in the Thermomix and chopped for a few seconds (peel and all, even the lime - especially the lime!). I hope this works just as well in a food processor if you don't have a Thermomix? I then picked some fresh coriander from my balcony and chopped it in, mixed up and YUMMO! I imagine it would compliment a piece of Thai style grilled fish or some chilli grilled chicken? Try it and let me know what you think and what you find to serve it with. See the 'recipe' below.
2 Green/Granny Smith Apples
1 heaped tablespoon Sauerkraut
Small Bunch Coriander
Extra 1/2 lime juiced if you would like to store in the fridge for up to 24 hours
Wash and coarsely chop all ingredients. Place in a Thermomix if you have one at speed 6 for 4 seconds, scrape the sides and then chop again at speed 6 for about 3-6 seconds. Or use a food processor to chop finely.
Add more chopped coriander and lime juice to serve if you like. Store the leftovers covered in the fridge for up to 24 hours.
